Tuna & Chickpea Lettuce Wraps


Servings: 1


Ingredients:


2 large romaine (cos) lettuce leaves
1 small can of tuna, drained
1/4 cup of diced red pepper
1/4 cup of diced cucumber
1/4 cup of chickpeas
1 tbsp mayonnaise
1 squeeze of lemon
Salt & pepper to taste


Method:


  1. Place all ingredients except the lettuce leaves in a small bowl and mix until fully combined.
  2. Divide out the mixture into two large lettuce leaves.
  3. Add an extra squeeze of lemon and seasoning to taste, then enjoy!
